Haven't seen many 350-pound men do hip pullovers like that; or even swinging by their arms that easily.

Good lord. That is impressive. Would not want to spot him. I was spotting hip pull-overs for the 1st time at the gym last week, and they're probably one of the most strenuous (anything on high/uneven bar actually) things to spot. If the girl/guy screws up it's dead-weight, all up in your grill out of nowhere.

How/why would you spot a hip pullover... from the bottom to grab them if they slip catching themselves in the hang?

For girls who aren't strong enough to pull themselves over. It's mostly a technique thing. You give them a little 'bump' to get their hips over the bar. Especially when they're doing multiple pullovers starting from the top position on the bar, you have to make sure their hips stay close. If their hips aren't 'glued to the bar', they won't be able to make it back over to the starting position if that makes any sense at all.

Yeah, it does, thanks. Hadn't thought of that, but now that you mention it just getting my hips to stay on the bar, up from a dead hang, is the hardest part for me. Haven't tried starting at the top.
