Homemade hummus recipe

Just thought I'd share my own hummus recipe that I've developed over the years. I got it originally from a jewish cookbook but have tinkered with it a little bit. I should note that the original did not contain tahini, so I've always left that out.

1 roasted red pepper - peeled and seeded
1 can of chickpeas - 540 mL size (19 fl oz for you in the U.S.)
3-4 cloves of garlic - peeled and coarsely chopped
1/2 tsp of sea salt (or to your taste)
1 1/2 tsp of lemon juice
1/3 cup of virgin olive oil

Re: chickpeas - I have discovered that if you take about 10 minutes to "shell" the chickpease, you end up with a much smoother, silkier hummus.

Blend all of the above in a food processor for 3-4 minutes on high, occaisionally scraping the sides. Taste the mix and add any more salt or lemon juice as you see fit.

For a different flavour, you can add in parsley instead of roasted red pepper. The nice thing about this dish is that you can bring it to parties and usually most people can have it unless you have a rare person with a nightshade allergy.

I eat so much hummus being Greek, love it, just made a lemon and coriander one today coincidentally!
