Chicken and spaghetti squash

I tried this out tonight as an experiment. I think it mostly worked well.

1/2 of a spaghetti squash
1 chicken breast
mushrooms - 6-8 sliced - depending on size
3 cloves of garlic
oil or butter or margarine - use whatever is best for you. I'm still working on the exact amounts.
seasoning - I used salt, pepper, fresh chives from the garden, basil, red pepper flakes

Preheat oven to 375 F

Slip in the half of spaghetti squash and the chicken breast at the same time if it's a bone in breast (mine was). Season chicken breast with black pepper and salt to taste.

20 minutes later saute mushrooms in oil/butter/margarine, along with chopped garlic, basil, red pepper and fresh chives (last).

When the spaghetti squash and the chicken is cooked (not sure how long that took, I, ah, started reading...) remove everything from heat.
Cut up chicken into pieces. Release the "noodles" from the squash by running through the flesh with a fork and dump into serving dish, add in mushroom mix, add in chicken.

Toss and serve.
It's pretty easy and makes for a slightly different chicken dish.

AWWWW MAN! I couldn't find any spaghetti squash. Wound up having 2 peanut butter and banana on homemade bread and a huge almond milk, pea protein and hemp protein shake'm up.
Definitely not my first choice but I'm satiated.

This spaghetti squash recipe will be in my mind until I eat it!

Found a spaghetti squash today and surprised the wife with dinner tonight. Slightly different than you recipe Glinda.

While squash is cooking (takes about 45 min @ 375F if split in two)

Pan fry chicken in coconut oil with
garlic -2 cloves
salt
pepper
hot sauce
----------------------
In another pan- sautee
4-5 baby bellas cut up
in 1/3 stick butter
more pepper
1/2 cup kefir (homemade)
simmer down til it gets thick (I added a little flour)
----------------------
Shred the squash
Shred the chicken
put some chicken in the sauce
put some chicken on the squash
grate some sharp cheddar on top of everything
EAT!
---------------------
Wife loved it!
(Next time, I'll have a salad and rolls to make it complete!)
