Canned Pumpkin Recipes

Anyone got any good canned pumpkin recipes that don't involve pie?

I just bought some and ate it last night...the texture just gets to me. I'm looking for an alternative to bread (trying to recomp a little on heavy squat/dead days), which I don't eat anyway, so it's more of another additional carb I can add to my big PM meals.

Anyways, if you've got something easy,useful, and/or tasty, hook me up guys.

I like making pumpkin (& butternut squash) soup. Pick a good broth (chicken or vegetable usually) of the healthy kind.

Really basic instructions:
Dice some onion & garlic and saute in your choice of a light oil until the onions are translucent. Add the pumpkin and pour in the broth. mash pumking and broth together and let simmer on low. Check it every 20-30 minutes or so to add more broth and some other flavours like sage, rosemary and I've seen bacon used.

After 90 minutes or so, puree the soup in parts. Garnish as you like.

It's not gourmet, but its not a bad little project- you can experiment with the flavours and freeze portions of it for future meals.

Glinda, I once made pumpkin soup. It was delicious! The only problem was that it was supposed to be a pie! :facepalm: :oops:

Thanks guys! I'll try some of it out. I want to try protein pumpkin pancakes.

If none of the pumpkin stuff works out, I'll just switch over to rice or something. Who knows.

I might try Quinoa. The only thing that concerns me with that is cost. Pumpkin and rice and potatoes are cheap (and recommended by guys like Nate Miyaki and Ferruggia), quinoa I've heard is a little more pricy. My college student budget may not allow for it. I'll check out the prices around town though and see what I can find.

that is the only problem...now on the other hand, the nutritional value outweighs the price though.

Well you can spend the money you'd otherwise spend in SHIRTS....on quinoa. ;)

Buying it in a big old bag at Costco seems to be the lowest cost way to buy it.

And how about pumpkin pie that's quite uber healthy for ya:

Diet Friendly Crustless Protein Pumpkin Pie

- 2 cups of pumpkin purée (it's full of fiber and very low in carbs. I used canned pure pumpkin purée),
- 1/4 cup Splenda for baking (it's a big yellow bag in the baking aisle.. Don't use the lit
tle packets because it's more concentrated and it will taste different),
- 1 scoop of vanilla whey protein,
- 1/2 cup of eggwhites,
- 1/2 tbsp cinnamon

Put everything in a blender and mix it up. Pre-heat oven to 350F and bake it for 45 min. Cool it in the fridge for 1-2 hours. For the "whipped cream", mix Greek yogurt with stevia and top the pie with that. Great way to enjoy a Thanksgiving desert without the guilty of all the empty calories!
